The recipe, typical of the Pitiusa island, can be prepared at any time of the year, but has traditionally been cooked within the framework of the festivities of this saint widely celebrated throughout the country.

PalmHave you ever thought about using dehydrated pasta to make a dessert? In Ibiza, in addition to preparing macaroni in the familiar ways—with tomato, pesto, aioli, or any of the other options Mediterranean cuisine offers—they also prepare it in a format designed for dessert.

This recipe, typical of the Pitiusan island, can be prepared at any time of year, but has traditionally been cooked during the Sant Joan festivities. A striking fact is that this San Juan dessert is popularly known as macaroni, but the traditional recipe is made with burballes, a pasta that in Mallorca is usually cooked with broth and meat and is somewhat similar to tagliatelle, but with a more curly texture.

The dish, made with milk and cinnamon, may be reminiscent of white food, medieval desserts traditionally made in Catalan-speaking territories, as they are cooked from Terres de l'Ebre to Menorca and Alghero, with the difference that in Terres de l'Ebre it is usually prepared with almonds, while in the latter it is prepared with almonds. The typical preparation of San Juan may also be reminiscent of rice pudding, a dish that is usually cooked especially in places like Asturias and other cities on the Peninsula, since, if we replace the bubbles with rice, it is almost identical.

Ingredients

500 g of burballes

2 liters of milk

2 lemons

2 cinnamon sticks

300 g of sugar

Cinnamon a lot per sachet

We'll heat the milk with the sugar, lemon peels, and cinnamon sticks. When it starts to boil, add the St. John's Day macaroni, reduce the heat, and let it simmer until cooked. It shouldn't be completely dry, but with a little broth.

We'll remove the lemon peels and the cinnamon stick. Next, we'll divide the macaroni into the bowls where we'll be serving them and sprinkle them with plenty of cinnamon.

It's recommended that, once cooked, they rest in the refrigerator so that they're perfectly cold when ready to eat. Likewise, this festive recipe for St. John's Day is perfect for a snack or a summer dinner, as although it's a sweet dish, it's a hearty treat to eat after lunch.
