PalmThe Protected Geographical Indication (PGI) Sobrasada de Mallorca closed 2025 with 5.6 million pieces and over two million kilos sold, according to a statement from the regulatory board. The organization describes these figures as "remarkable results due to their stability" and emphasizes that consumption trends are consolidating sobrasada as a benchmark product. Last year, the Balearic Islands accounted for 36.7% of the market, representing a 3% increase compared to 2024, thus confirming the product's recognition in its region of origin. The rest of Spain remains the main driver of sales, representing 59.3% of the total, despite a relative decrease of 2.7%, as production increased by 0.5%.

Internationally, the PGI maintained its presence in countries such as France, Germany, Switzerland, Lithuania, Portugal, Andorra, and the United Kingdom, which account for 4% of total sales. However, the regulatory board warns that international penetration depends on greater institutional support so that the protected varieties can compete with large companies.

Smaller sobrasadas, an upward trend

Among the new developments for 2025, the regulatory board highlights the rise of smaller formats. Lighter-weight items accounted for 50% of sales by number of units, and those under 500 grams represented more than 85% of total sales. Regarding product types, Sobrasada de Mallorca PGI leads sales with 1.9 million kilos (94%), while Sobrasada de Mallorca de Cerdo Negro PGI reached 116,543 kilos (6%). "The PGI is moving in the right direction, with an increasingly strong focus on product knowledge, disseminating its characteristics, and strengthening traceability, without losing its connection to traditional production and the sustainability of the region," stated Andreu Palou, president of the regulatory board. Currently, the Protected Geographical Indication (PGI) Sobrasada de Mallorca has 15 registered producers and 24 registered livestock farms, and ensures compliance with the production, processing, and curing requirements, thus guaranteeing the quality and characteristics that make it unique.
