PalmMenorcan chef Josep Maria Borràs, recognized last November as the best chef in Spain and Portugal, is participating this Tuesday and Wednesday in Milan in the St. Pellegrino Young Chef Academy Competition, the contest that will select the best young chef in the world. A total of 15 finalists from around the world are competing, according to the Menorca Tourism Promotion Foundation.

Borràs, a 25-year-old native of Mahon, has been trained by his mentor, fellow Mallorcan chef Andreu Genestra, with the goal of playing a prominent role in this prestigious gastronomic event. His recipe is a sea and mountain dish that combines lobster and Balearic suckling pig, a combination that celebrates local produce from Menorca and Mallorca. This recipe already earned him victory in the mainland competition last year, and now he has perfected it to take on the global challenge.

Borràs currently heads the kitchens of the Annua group's hotels in Menorca and, in August, was recognized as the new ambassador of the Menorca 2022 European Gastronomic Region, a title that reinforces his commitment to local cuisine and the promotion of island produce.
