PalmThe cook for the Aromata team, Daniela Reigosa, has won the award for the best tapa made with Mallorca Oil in the final of the Oleotapa competition, which was held at the Balearic Islands Hospitality School. She achieved this with the tapa called Tomato stuffed with Mallorca Oil with ice cream.

This twelfth edition of the event brought together four finalists who, as in previous editions, displayed a high level of skill and creativity in integrating Extra Virgin Olive Oil, hence the difficulty for the jury formed by the Palma City Award for Gastronomy Caty Juan de Corral and executive chef of the Qanat restaurant, José Cortés; the president of the Association of Gastronomic Journalists and Writers, José Maria Natta; the member of the board of directors of the Olivar Market, Christian Félix Bustos; the EHIB professors, José Maria Calonge and Marcos Martínez, and Lucas Catalá representing the Regulatory Council of the DO Oli de Mallorca.

Indeed, if something has stood out very positively is that the chefs have not only given presence to olive juice in the various preparations that made up their proposals, but in some cases have even used different varieties depending on the process to bring more complexity to the entire dish.

However, only one of them could win the first prize and it has been the Tomatiga farcida d’Oli de Mallorca amb gelat that has obtained a higher score from the jury. A miniature dish for which, according to Daniela Reigosa, Extra Virgin Olive Oil is not only a complement or accompaniment, but the common thread that serves as a guide through the flavors.
