This distinction, which this year comes with a new educational initiative for restaurateurs through the 'Curso Copil' program, places Mallorca and Ibiza on the reference map of Mexican gastronomy in the State. The promoters of the seal particularly emphasize the quality of the products, the respect for traditional recipes, and the innovation capacity of the selected restaurants.

Among the recognized establishments are several names already consolidated in the Balearic gastronomic scene. In Palma, the list includes Agabar, Chilate, El Aquanauta, and Xólotl, which in recent years have contributed to popularizing Mexican cuisine far from stereotypes and focused on artisanal preparations, traditional tacos, and authentic Mexican ingredients.

Nixtli, in Sóller, and Mextial Taco Bar, in Calvià, have also been distinguished, while Can Simoneta, in Canyamel, incorporates the Mexican offering within its high-level gastronomic offer. In Ibiza, the recognition goes to Palo Santo, Salón San Miguel, and Tacosanto, three establishments that have consolidated the island as one of the main showcases for quality international cuisine.
